Pasta alla Bolognese



INGREDIENTS

1 white onion sliced
3 carrots sliced
4 stalks celery sliced
2 lbs ground beef
1 1/2 cups tomato paste
2 cups red wine
3 tablespoons olive oil
3 bay leaves
2 1/2 cups water
parmigiano reggiano cheese
spaghetti
salt and pepper to taste

Add the onion, carrots and celery in a food processor if you don't have any chop them. In a pan heat the olive oil then add the onions, carrots and celery  season it with salt and pepper and let it cook for 35 to 45 minutes until brown. Then add the ground beef season with salt and pepper again and let it cook until it gets brown for about 35 minutes. Add the tomato paste and stir it for a 3 to 5 minutes then add the red wine and stir it again and add the water and bay leaves. Simmer it and keep stirring until the water will just cover the meat. Cook your spaghetti and add your sauce then sprinkle some parmigiano reggiano cheese.

PORK HUMBA

One of our Classic Visayan Filipino Recipes,,,  i have seen a lot of different versions of this recipe but this is how my maternal grandmother make it :)

INGREDIENTS
2 lbs pork belly cut into cubes
1 cup white vinegar
1 cup soy sauce
1 1/2 cup brown sugar
5 cloves crushed garlic
4 bay leaves
1 small can salted black beans (drained and rinsed)
1/2 cup dried banana blossoms (optional)
2 Tablespoons crushed peppercorns

Season the pork with a little salt and pepper then cook it in a wok until it will get brown and the pork fat starts to come out. In a bowl,  add all the ingredients except for the black beans and mix it until the sugar dissolves . Then add the sauce mix to the pork and let it simmer for 45 minutes to an hour or until the sauce becomes sticky then drain, rinse the black beans then mix it to the pork. Serve it with rice :)
