Bifteki

Last Saturday we went to Speyer, Germany to see the Technik Museum. The kids had really a good time and after we decided to find a good restaurant. We ended up going into a Greek Restaurant and hubster ordered bifteki. He used to live in Greece for 9 years and speaks Greek. I thought I already know all the Greek food by visiting the Greek Islands and living with him :-) The bifteki was so good that I decided to cook it at home and here it is ENJOY !




 INGREDIENTS

1 1/2 lb ground beef
1/2 cup bread crumbs or (stale bread if you have)
2 eggs
1/4 cup feta cheese
chopped parsley
chopped fresh oregano
1 teaspoon allspice
salt and black pepper to taste

Mix all the ingredients in a bowl and form a patty and fry it. It's good with tzatziki sauce. You can find the tzatziki sauce recipe in my blog as well.

Filipino Pork Menudo

One of my favorite I love the sweetness of this dish from the raisins and hubster love this too :-)


Ingredients :

2 lbs cubed pork tenderloins
3 cubed medium potatoes
3 cubed carrots
3 or 4 fried chicken liver (chopped or grinded in food processor )
1 can 8 oz tomato sauce
1/2 cup catsup
3 bay leaves
1/2 cup raisins
1 red bell pepper diced
1 white onion diced
3 cloves garlic minced
juice of 1 big lemon
1 can of sprite or cola
5 tbsp soy sauce
3 tbsp olive oil
black pepper

Marinate the pork with lemon juice, soy sauce, sprite or cola, bay leaves and pepper for about at least an hour. In a pan saute the onion and garlic then add the pork then let it simmer for about 30 minutes. Add the rest of the ingredients cover it and let it simmer again until the potatoes and carrots will be cooked. Some people like to add some parmiggiano cheese at the end :-) Serve this on top of the rice :-)

Potato Salad

My husband had a potluck party at work and I decided to make this potato salad. It is really good and I just decided to add ingredients in the salad some stuff that I have in our refrigerator. It came out pretty good and that is the reason I am sharing this recipe :-)










INGREDIENTS                                                          
                                                                                   
3 lbs        yukon gold potatoes
2 cups     mayonnaise
2 cups     plain greek yogurt
2 tbsp      pickle relish
1/4 cup   olive oil
5 basil leaves chopped
3 stalks of celery minced
1/2 red onion diced
1/2 lb crispy cooked bacon and crumbled
juice of 1 lemon
salt and pepper to taste

Boil the potatoes until tender drain it and let it cool. Then peel it and cut it and put it in a bowl. In a small dish put the onion and add salt, pepper and the juice of the lemon. In a separate bowl mix the rest of the ingredients then add the potatoes the onion and the bacon. Cover the bowl and refrigerate it for at least an hour.





Orzo Pasta


Ingredients

1 lb      Orzo pasta
1/2 lb   shrimp or grilled chicken or both
2          cloves garlic chopped
1/2        red onion diced
1 cup    cherry tomatoes
3           basil leaves chopped
1/2 cup  grated parmiggiano reggiano cheese
2 lemons  use the zest and juice
1/2 cup  olive oil
salt and pepper to taste


Cook the orzo pasta per packaged instructions. Saute the garlic in a frying pan with a little olive oil then add the shrimp. When it's done take it out from the pan and set it aside. In a mixing bowl mix the rest of the ingredients except for the the cheese. When pasta is done drain it put it in the mixing bowl with the rest of the ingredients. Mix it well then add the cheese and the shrimp.

Pasta alla Bolognese



INGREDIENTS

1 white onion sliced
3 carrots sliced
4 stalks celery sliced
2 lbs ground beef
1 1/2 cups tomato paste
2 cups red wine
3 tablespoons olive oil
3 bay leaves
2 1/2 cups water
parmigiano reggiano cheese
spaghetti
salt and pepper to taste

Add the onion, carrots and celery in a food processor if you don't have any chop them. In a pan heat the olive oil then add the onions, carrots and celery  season it with salt and pepper and let it cook for 35 to 45 minutes until brown. Then add the ground beef season with salt and pepper again and let it cook until it gets brown for about 35 minutes. Add the tomato paste and stir it for a 3 to 5 minutes then add the red wine and stir it again and add the water and bay leaves. Simmer it and keep stirring until the water will just cover the meat. Cook your spaghetti and add your sauce then sprinkle some parmigiano reggiano cheese.

PORK HUMBA

One of our Classic Visayan Filipino Recipes,,,  i have seen a lot of different versions of this recipe but this is how my maternal grandmother make it :)

INGREDIENTS
2 lbs pork belly cut into cubes
1 cup white vinegar
1 cup soy sauce
1 1/2 cup brown sugar
5 cloves crushed garlic
4 bay leaves
1 small can salted black beans (drained and rinsed)
1/2 cup dried banana blossoms (optional)
2 Tablespoons crushed peppercorns

Season the pork with a little salt and pepper then cook it in a wok until it will get brown and the pork fat starts to come out. In a bowl,  add all the ingredients except for the black beans and mix it until the sugar dissolves . Then add the sauce mix to the pork and let it simmer for 45 minutes to an hour or until the sauce becomes sticky then drain, rinse the black beans then mix it to the pork. Serve it with rice :)
